HCG Diet Chicken Curry and Apple Salad Recipe

There are plenty of ways to create tasty HCG Diet daily meals just by opening up your spice drawer or cupboard. The spices of Indian and Middle Eastern flavors such as curry, turmeric, cumin, cardamom, coriander, and saffron, just to name a few, are an excellent way to turn a bland meal into an amazing flavorful dish.

I did two rounds of the HCG Diet and stuck strictly to the foods on the list. At first meal time was rather a dull affair with grilled chicken, lettuce, cucumbers salt and pepper. After the first week of boring meals I realized I was overlooking spices. This now meant that every spice in my cupboard was available. This realization forced me to think about how I could enhance my meals on the HCG Diet. Each meal became a creation of what spices I choose to use from my cupboard. This salad became one of my favorite dishes.

Chicken Curry and Apple Salad


  • 100 grams of sliced chicken
  • 1 ¾ cups of chopped lettuce of your choice
  • ¼ cup onions, diced
  • ½ to 1 tsp curry powder per taste
  • 1 ½ tsp lemon juice
  • ½ water
  • ½ apple, cut into small bite sized pieces
  • 1 tsp MCT Oil
  • salt

Substitutions: Cucumber can also be added or substituted for onions or apples. Change HCG Diet quantities accordingly. Cumin is another spice that can be added to enhance the dish.


Sauté onions in ½ tsp MCT oil. When onions are tender add another ½ tsp of MCT oil and sliced chicken. Sprinkle curry powder over the chicken; amount to your taste. Cook chicken untill all sides are slightly browned. Add lemon juice and water. Let mixture simmer until almost all of the liquid has evaporated and chicken is cooked through. The ending mixture should be a yellowish brown color and slightly thickened. Add salt if desired.

While mixture is simmering prepare lettuce and apple. Mix together in a medium sized bowl. When chicken and onions are ready mix them in with the lettuce and apple mixture. With tongs place your salad on a large plate.

One of the wonderful attributes of this dish is the mixture of warm and cool. The curry chicken and onions give it flavorful warmth and the lettuce and apple give it a cool crispness. For me, this dish added an exotic flavor to my HCG Diet meal time.
